" Hot " Hot Pockets : Smoked Jalepeno and Cheese Sausage, mini Calzones 7" long
BBQ'ed a bunch of Cheese and Jalepeno sausages for supper the day before.
Had a few left over so this is what I did with them. Also Made a batch of my Pizza dough the night before and kept it in the fridge until ready to use.
Made fried rice , diced up the sausages, Jalepenos, onions, and a lot of parsley. Fried in the pan with a couple spoons of Marinara sauce just enough to hold it all together.
Brought out the pizza dough and cut it into 4oz +/- pieces. Made into 8 small circles.
Put a large scoop of the rice and sausage mix in the middle of each, topped with a spoon of sauce and topped that with cheese.
Made them into Calzone shapes , poked a couple holes in the tops to let steam out.
Had the BBQ warmed up to 425 with my stone in it. And put them in 3 at a time as I was making them.
My smoke tin had a little cherry chips still in it , so these were lightly smoked on the outside also.
These are a little over 7" long, Perfect for hand food ,lol
I had a little cheese left over so I added to the top of a couple, they did not need it .
Here is the cut look, nice and filled and not runny, but just right for me.
They are very good flavour and yes nice heat for the sausage and the chopped Jalepenos in the mix.
I had 2 with extra bowl of sauce to dip into. Dough is nice and fluffy and a good taste and texture.

This was very good, but the ladies did not want because of the heat..... All mine lol
( it really was not overly hot, they just did not believe me )
