Was in a time crunch yesterday so ended up having to do ribs hot and fast. Used memphis dust as the rub with a base coat of kosher salt and an apple cider vinager/water/rub mop. 18.5 inch wsm right around 280 2 chunks of hickory and one chunk of apple. 2 racks of baby backs done perfectly right around 3 hrs and a rack of spares took about 4. The baby backs were perfect bite clean through them meat pulled right off the bone, but didn't fall off. The spares were good, the smaller ones were a little tough but the bigger ones were perfect. We did finally settle my household debate of spares vs baby backs though the baby backs being the winners!
