I have a quick question. Can Hormel always tender (12% solution) pork loins and boneless butts be cured for canadian bacon and buckboard? I want to stock up at the grocery store I work at while cheap and not sure when I will try but wanted to make sure I'm not wasting my money. Another question can meat be frozen then thawed before curing? Thanks
 
Yes, just about all pork nowadays is 'enhanced'.  Just proceed as normal.  I just did 4 butts and two bnls pork loins for BBB/Sausages and Can. bacon myself, just cut up and cured it, it was all enhanced.  I did inject it however, I want 'My Stuff' to take the other stuff's place, lol!  If you want non-enhanced, farm raised, look on www.eatwild.com to find local producers that organically raise beef, pork, veal, goat, emu, etc. with no additives or hormones.
