Almost every year I help the Holy Cow Cookers at the Houston Rodeo BBQ Cookoff. This year they got invited to the 19th Annual Jack Daniels World Championship INVITATIONAL. I see where they placed 6th in brisket. Congratulations!
I have attached a couple of pics from the year that we cooked ostrich and goat for the Food Network. First is all Team members w/me on the left in a a black hat. Second is me helping cook ostrich burgers and goat kabobs for the Food Network presentation.

I've cooked a few goats, but have not tried ostrich. Will put that on my to do list.
 
Nice group there Goat! very professional looking group. The Jack Daniels invitational - wow! Must be some super good smoking going on with them eh?

Ostridge is really good! Kind of a cross between duck and pulled pork for texture and taste. I've never cooked it but they served it for dinner one night when I was a Grove Crane School in shady Grove PA a few years back (Before they got bought by Manitowoc). Boy that place used to serve some awsome food! Free gormet food and deserts 3 times a day, snacks, donuts soda pop, coffee and water all day and all the beer and booze you could handle at night! WooHoo! Most of the guys would gain 10 to 20 pounds in a 2 week class!

That's where I had my first Yuengling Black and Tan been drinking it ever since!
