A little safety tip for those wanting to "FRY" ole Tom/Hen or Chickens . As stated here over and over , Brining is the grandest way to keep moisture in the Bird as it cooks. A rinse is needed after the Swim , and letting it drain well.

Now, before you Brine or anything else , place the bird in your fryer and fill enough water to just cover the bird , this should be marker on the outside as a level to fill with oil or you will get overflow and FIRE

Now, heat your oil to 375° and before introducing the Bird to the HOT OIL ,turn the gas off to prevent a huge fire because it will increase in volume when the cold wet Bird is added. You'll have to lower the bird very slowly to prevent any expantion. Also it is best if you do this on the sidewalk to save your porch as it will splash a bit but not enough to flame-up ; after it has settled down a bit, re-light the Gas and carry on with the meal.

After the Bird is done , let it drain back into the pot ,rest it some and then enjoy

Great reminder.  We just had a family here in vegas lose their mother and father from the fryer tipping over, oil fire and then the house caught on fire.  Their kids are still in hospital.  BE SAFE!!!!!
 
Good advice, I never thought of turning off the burner when lowering the bird into the oil.

I will add, when lowering the bird into the oil,,,,,,, slowly lower it in about a 1/4 of the bird at a time, hold a few seconds,  then raise out of the oil, then lower it 1/2 this time, hold a few seconds,  then raise, lower 3/4, then raise it and slowly lower the whole thing in.

Also have your set up away from the house if a problem does arrive, you wont catch the house on fire. A grease fire is nasty, and don't grab the water hose to try and put it out.

If you walk up there and drop it right away you risk an overflow that can burn you or your house down!
