I was 1 mile from work when skies let loose and highway turned into ice ring in seconds. I was far enough behind where it started and was able to stop. That the same storm that caused the 130 car pile up on 635.It's getting pretty tragic Brian. Temps have not come close to going above freezing for the past 4 days. All the ice from the storm a few days ago is still here. None has melted. We had more come in last night and the roads are a sheet of ice. Temps right now are low 20's with below zero wind chills. We are supposed to get 5-6 inches of snow tonight and more ice throughout the day. It's spitting ice right now and of course, as cold as it is, everything is sticking. Same for tonight but temps are supposed to be single digits. We won't see temps above freezing until Wednesday at best but between Tuesday night and Wednesday morning there is supposed to me more snow and ice coming. We could literally be shut down for the better part of a week before this mess clears out. I know this is nothing compared to what many of you are dealing with but for this part of the country, it's HUGE. Thankfully I saw this coming. Stopped just before the ice storm hit and grabbed a few things we needed, came home, and battened down the hatches. We have plenty of meat and the pantry is well stocked. Most importantly we have plenty of beer and bourbon so there's no need for us to leave. With the hundreds and hundreds of accidents that have been reported, I'm eternally grateful for our blessings and that we are able to stay safe and not do without anything. Yesterday morning the roads in our neighborhood were clear so I made a run into town to grab some shelving material at Lowe's for a project Tracy wanted done in her craft room. The first few miles the roads were fine then I came upon a multi-car crash so slowed way down....thank God. The roads were suddenly a sheet of ice. I kept going but VERY slowly and made it home unscathed. Some folks weren't as lucky...or as smart it appears. This is at the corner of the road I came down on the way home from Lowe's and the main road we live off of about 6 miles to the west. I stopped to fill up with gas and came upon this:

Apparently the people in the van were illegal immigrants, and they do abound in this area. As I was leaving from getting my gas they were being hand cuffed and arrested. My guess is they had no license or insurance in addition to being illegal. The van made a right turn on red directly in front of the car on an icy road. The car could not stop and smashed into the van turning it sideways and it flipped when it went off the road. This could have easily been avoided if people would just use common sense but apparently that's in short supply too.

I usually rehydrate. I’m cooking carne adovada today. Rehydrated Chile blended for about five minutes mixed back into pork chunks in gravy. Slow cooked until meat is tender.This what I picked out. Wonder i could just grind chilies or should re-hydrate?

Yeah. That how normally would do them but feeling lazy. I planned on making Jakes recipe which I love and got blindsided with no powder.I'm late to the party but stopped using chili powder a few years ago. Now only use dried peppers, usually 8, to make a pot with a 4 to 5 lb brisket point.
The trick to drawing the maximum flavor out of the chilies is to de-seed, then toast them I'm a dry skillet until they soften and their oils start to appear on the skin. Only takes a few minutes a side.
Then reconstitute for 20-30 minutes, blend with a little of the soak water to make a slurry. Then add the blended chilies AND the soak water to the pot, along with your other ingredients.
Too late now, but an idea for next time.
Oh, and you can toast the seeds, crush them to powder, and use them, too. Gives a nutty flavor and a little more heat.

Yep we've been head down, ass up around here the last several days trying to seal up leaks, cracks, & drafts. Got the barn as sealed up as we could and it's holding court well. Only 1 toilet out of 3 has a frozen water line otherwise all our water is still dripping. Tonight is gonna be the tough one. I just made drive to Dallas for work. Boss basically telling everyone he wants them here today through a group text that I got 100 replies from everyone. I be so glad to get away from this place. Storm coming in tomorrow. Probably get to work ok but going home may be another thing. Oh, and since this is a chili thread yeah I made my base chili 2 days ago. It's almost gone.
