kevin, morning... If you would ask questions on the original thread you started, folks could follow along... they would know what size your smokehouse is, and give you good answers......

It would help if we knew what the shelf is going in. What is your heat source? In my UDS I put the shelves 3" apart. Remember jerky and ribs don't take much room.
One question at a time is good.... keeps folks from getting confused... BUT.... asking them on the same thread, keeps everyone "in tune" as to what's happened previously....
