Forgive me all, I am a noob at smoking but I am patiently trying to figure it out. I purchased a propane smoker and have been trying to keep my temps down, the lowest I have been able to get it to us 300 degrees F. All the vents are closed and the gas is as low as I could get it. Any suggestions on what else I can possibly do. If it helps this is the smoker I purchased Masterbuilt Pro MDS 230S Dual Fuel Smoker.

not familiar with your smoker but did you try to open your vents all the way, is your thermometer accurate, 300 seems awful high for a low temp. i'm sure someone familiar with your smoker will be around

I had a hard time controlling temps in my propane King Kooker also in the summer time. That was my reasoning why I purchased my MES 40. A needle valve may help somewhat.

I'm thinking your going by the manufacturers thermometer ??

My suggestions would be to research the needle valve mod ... and get a digital dual probed thermometer (tested in boiling water) ...

Make sure the top vent is wide open to let as much heat out as possible

Does that model come with a water pan/ drip pan?
