Well my second batch of jerky turned out  a lot better than the first!  I didn't think it was that great but, I got rave reviews at work. Apparently I'm my worst critic!!!  But my question is, I'm using High Mountain jerky seasoning and I noticed it says to refrigerate the jerky after making it which is fine but is it really necessary after smoking it? Thanks guys!
 
It should be refrigerated or stored in a air tight container. If not, over time at room temp it will get some mold on.  I vacuum pack mine in small quantities , freeze and take out of the freezer as needed. Lasts forever that way.
