high end dual fuel ranges

I've had both Viking and wolf. the Viking came with a house we bought and was both abused and 20 years old, but a good range. the Wolf we bought as a replacement for the Viking on a remodel. it was nice but the oven was loud.

anyone have a newer Viking and how do you like it? if you have any other high end range experiences please share.

We’ve had a 36 Wolf range top with griddle (the older double burners very nice the griddle was the bomb!

Had a 36” capital gas range, burners were pro type but simmer wasn’t at all good…… Oven was…..well was just not good, changed out the convection fan assembly, burner, jet all at the direction from the manufacture……nothing would make it work…….

Had a 30” Thermador Pro Gas range on Propane LOVED IT!!!! It did have the radiant gas boiler very nice! We also had the Pro electric convection wall oven that was very nice. No hesitation making a recommendation

We now have the GE cafe (Monagram) 36 range top with 6-18K burners a dual ring burner….just fantastic high and simmer all around. We have a double Bosch oven set with it now and it is the same as the Thermador in performance. I would also recommend Monagram as well.

Sorry David no house experience with Viking or Wolf. Don't remember the units at the churches we have been members, but IMHO you cannot beat a commercial quality range top.
Long time ago I got to cook on a Vulcan and fell in love with it. Not sure how it compares to other commercial units. I want a gas top again.
I don't like gas ovens at all. Yes, they are noisy, wider temperature swings than electric, and I don't like the smell they leave on baked goods. I'm sensitive to Mercaptan.

I have cooked in many Vulcans……. Just amazing! We had a 72” growing up as well…. Unfortunately many local regs won’t allow them in a residential setting….. I do have a make air system to go with our range top….

the GE Cafe looks nice. the dual fuel double oven might be the ticket. is the oven loud? the viking, wolf, and now kitchenaid make a racket when the cooling fans turn on. pretty sure its the safety fan to keep the gas lines from overheating. the price point is more digestible too!
 
The Cafe, is a little step down from the Monogram and the Thermador is up with the Monogram.

My preference of choice for a 30" (I'm not sure what size you were looking for)

Thermador Pro Harmony DF, they have a 4 burner or 5 burners
Monogram Professional Range DF
Cafe DF, the one with the warming drawer in the bottom, I've had the pre-cafe version stove of this and it's a nice add! If you study the specs and compare to the Monogram you can see the carry over. Our range top is an exact duplicate of Monogram.

All of them have fan noise to keep the electronics cool,

We have had Kitchen Aid wall ovens and NEVER again! They were noisy and not reliable. Motherboard issues and clicking and bearing screaming squeaks. KA replaced the MB but refuse to fix the screaming bearings as that was a full replacement and they said they are just noisy.......

Good intel! many thanks. our house came with a KA and its at least 15+ years old. no love for it at all. of everything that came in the house this is surely the first thats gonna die if not be replaced before it does.

Thermador looks very nice! Monogram looks good. the vikings have bad reviews. the Wolf has gone way up in price since we bought out last one...but that happens. I will need to see what the boss likes and go to a show room and kick the tires.

I have a Dacor dual fuel about 10 years old. I think they're considered low-tier high end if that makes sense. Got a great deal on it. Doctor bought a foreclosed "new" house and his wife wanted a bigger one. Looked like it might have been used only a couple times.

It works great for my needs. The simmer could be a bit lower but I just throw a diffuser on the burner. I think the newer models do better. Been 99% problem free all these years. The 1% is that the clock turned to 24hr time rather than the US standard 12hr. I read on the interwebz that the fix requires some combo of button pushing while cycling the circuit breaker off/on.

It doesn't bother me enough to worry about it. Here in Florida we get power glitches weekly with our afternoon storms. I never bother to even set it.
 
We have this one, and it's the best unit I've ever owned. The 20K BTU burner with a wok grate is the hottest I can get by code indoors. While the outdoor 160K is nice (and much more of a true wok experience), it sucks in the summer...

thats the exact one we left in our last house. bought when we remodeled the kitchen. it was real nice! my only complaint was the "safety fan" (not sure what else to call it. the one that runs when the oven is hot. its was a touch loud. performance was the best tho!!

we miss it, the KA that came in our home here blows.

Had a dual fuel Viking when they first came out, nice, but expensive to repair. Have a Bluestar RNB - very high output open burners and for the most part, very simple to operate. No complex touchscreen or lcd screen, just a knob to set temp of the oven. Some prefer closed burners, and Bluestar offers that model as well, but no personal experience.
