My name's Alicia and I'm a second year student at the Culinary Institute of Canada in Prince Edward Island. I'm currently researching Corsican figatellu & other sausages for a charcuterie project. If you have any tips, I'd love some help.

I have never heard of that particular type of sausage but if it's been made before someone on this forum has made it.

Are there any other recipes or techniques you might be interested in? 
 
Hello Alicia and welcome!  Like Al, I've not heard of Corsican Figatellu myself...but if any member here has ever prepared it, you would likely find a thread on it in the sausage section:
