to SMF!!! Were glad to have you! I don't have an electric so I probably can't help you much but there are a whole lot of MES owners here so I'm sure someone will be along shortly to answer your question. You can always use the search bar at the top to find a lot of answers also.

Would you do us a favor and update your profile to include your location, it helps when others offer advice, Thanks!

cuse, I'm in Sennett about halfway between Auburn and Skaneateles.  I'm a new guy here too but not new to cold smoking or BBQ.

Do you live in Syracuse proper of one of the outer towns?

I've never messed with an MES but when you refer to seasoning am I guessing you mean seasoning the smoker?  If so I'd venture an answer that, yes, you should open it.  As already stated though someone who has a firm answer will come along.  It may be easier to start try searching for threads with "MES" and "seasoning" in them or just post a thread over on the Smoking Meat page.

Good luck.

Lance

Thanks alot guys. Lance i lived in the city for 25 years and decided to buy a house and move the family to liverpool. Auburn huh? Thats where i bought my smoker at Bass Pro, i went for the 30 but for a 100 more got the 40. They were sold out so the floor model was 429 and the manager gave me 10% off so i took it.

Just wanted to add, after many many years of waiting, we now have Hofmann's German, all Beef and Snappy Grillers here in Fort Worth, Tx.!  Oneida Foods made good their promise and we are blessed with them now!  I was born and brought up near Watertown, NY, my dad owned a grocery store in Adams Center called Fassett's Quality Foods and we carried Hofmann's in the bulk box.  Moved here at age 46, 15 yrs ago, and could only get them mail order.  Now, Albertson's carry them nationwide!  Just had one yesterday for lunch, what a pleasure!
