 I just found this wonderful forum and have been inspired by it and it's members. I can't wait to do  some of the ideas posted here. Currently , I have a WSM smoker and an electric Smokin-it on the way. I plan to use the electric on those days when I can't tend to the WSM. I live and work on a ranch  and sometimes must have a set and forget  electric smoker even though I am close by. The cows seem to know when I have plans for a Q and will throw a wrench into any plans for tending a fire. I also have an indirect smoker which I seldom use because of this very reason. Lots of  large pecan limbs from the  old orchard are always available for those occasions when the cows are being considerate, however. I love smoked  food and am anxious  to try out suggestions mentioned on here. Thank you. Judy

   I am eager to try ribeyes/ prime rib so hope to try that after I learn a few things about  smoking correctly. At the last  cattlemen's meeting, we were served a delicious smoked and  carved as  it was served rib eye. It was moist, tender and delicious.--  bc

Thank you for the link. I will check that out. I love pecan- The last storm blew over yet another 85 year old tree so I have  plenty more than I'll ever use. Wish I could share it with ya'll.    judy
