Hi, everyone,

Just joined this forum and I'm looking forward to getting some new ideas. I live in Fargo, ND, and yes, I have seen the movie and we really do talk like that. I do a lot of grilling and smoking of things; I have both a charcoal and a propane grill on the deck that doesn't get used in the winter but gets used to a fault in the summer–5 days a week. I also have an electric smoker that I've been using for about 6 years or more and I've really enjoyed it. Just got a propane grill which has been one of my end games for awhile and I'm looking to add a side fire box to the charcoal grill this summer to change out the way I smoke things (this is an alternative I've come up with as opposed to a pellet grill; I think I can make it work and it will be more cost effective.

I have a question on the propane smoker that is a little more pressing, but I'll put it in another section. Thanks for reading!

Welcome from Kentucky. And I've gotta ask: Is there some law in North Dakota that says you can't insulate your cookers? Or why not use the temps in your favor to perfect your cold smoking. Ha!
 
Okay, I have to be honest here; been smoking things in the garage with the door open about 2 feet to along for air escape. I know it's a huge no-no but I do it anyway. But then, I haven't had a propane smoker till now. I'll still try it for now.

I do have both the MES 40 and the RT insulated.
PID controller so have done cold smokes when -10°.
Set it at 30° and let it roll.
