My name is Fred and have been grilling/smoking for a few years and I am interested in taking my skill to the next level. I live in Southern CA, (Inland Empire) and I plan to start a small barbeque catering business. I do have a full time corporate job but would love, to one day, run my own business doing what I have a passion for.

I will be purchasing a new "Brinkmann Trailmaster Limited Charcoal / Wood Grill and Smoker" for $299 next month. Through my research I have found the "Brinkmann" to be the best "offset smoker" for my budget ($300). I am aware of some simple mod's that can be done to control temp. so it appears to be a good choice. Any one have any suggestions on other "offset smokers" for the same price range but better quality???

Any Advise??
