My name is Niel. I've been lurking here for a few months now. I just started smoking meats a few months ago. I have a Cajun Injector Electric smoker (got it free from a neighbor broken and fixed it), a Traeger Bronson 20, Weber 14" Smokey Joe, and just added a Weber IGrill 2 to the toy collection. I decided to join because the forum has been very helpful. I'm look forward to making new acquaintances and sharing some great and maybe some not so great cooking stories with you all! I come from the school of trial and error... lol. The forum has helped me make less errors! I have 2 briskets, 1 pork butt, 2 racks of baby back ribs, 1 spatchcock chicken, 2 smoked meatloafs in bacon weave, beef short ribs, and smoked burgers under the belt. Out of all that only one of the briskets and the beef short ribs came out just barely edible. I think it was a combo of not cooking long enough and bad cuts of meats. Eveything eles came out spot on due to the great tips I've read here. Thanks for having me!
