Got myself a 55gal drum smoker last year n been havin a blast with it. Side note there was a free pickup of metal today so donated the old gas grill that I haven't used in years. Anyway this thing works great except I can't seem to get the temp below 225. The guy who built it has 6 holes drilled near the top for 3 hangers so it's hard to choke it down for a slow low temp cook. I have a plan to remedy that n will share later if it works. I'm doing a pork shoulder on Sunday ( 1st attempt ) any suggestions? Also planning to experiment on some chicken thighs Monday with a different type of marinade. I'll let ya know how that turns out also.

Welcome to the forum tbonez!  Glad you joined us.  I know that limiting airflow will allow lower temps, so those holes could be a problem.  Why do you want to go below 225?  I smoke butts, brisket, and ribs between 225 and 250.  I do poultry at 325-350.
