My first SS, it cooked much faster than I thought it would. By the time I checked it ( 4 hour mark / 225* ) the IT was 195*

Gave it an ice bath right away but wondering what I can expect. How long or at what IT can i slice into it to see how awful it is?
 
Smoke your sausage at 130-140 Deg. F.... Then cook after the smoke... at 170 ish.....
 
Lesson learned. Thanks Dave.  It's not inedible, just a little dry. Also bland as I didn't mix it. I don't have grinding / stuffing equipment yet so had a friend mix it and stuff it. He didn't use near enough spices.
