Okay so i am getting ready to really use my new MB XL gasser. She's all seasoned and i did a test run with some western style ribs to get her dialed in.
I am planning on doing a whole mess of injected hot wings (drumettes and wingettes) and was going to run at 350 to really crisp up the skins. The fellas are begging for a fatty and i have one in the works stuffed with pepperjack and capacola. My question is can i run the fatty at 350??? If so, how long do you think it will take at that temp? I am guessing the wings will take about an hour. I am worried about tossing the fatty in there as I usually run them around 225-230. This is new territory and I am reaching out for advice.
