I smoke salmon on the regular and it turns out great! I actually have a fishing trip coming up on Lake Huron and I'm hoping to land a monster pike for smoking. My cousin smoked a pike he caught last year and it was pretty delicious.

I have a faint memory from early childhood, we were on a trip in Michigan and we passed by a big commercial fish smoking operation. I remember the smokers resembled giant teepees with mesh tops. There were flocks of seagulls circling them. My Lithuanian parents were happy to find that, smoked fish is big over there.
