I am new to smoking meat, but not to meat.  I have been a butcher since I was 11 yrs old and love every second of it.  I just got my first smoker the other day and my first pork butt was a disaster!  After some reasurch online I found this forum, and I think I found my problem.  I look forward to everyone's coments in the future as I post future results.
