Hello need help with my jerky

Hi there my name is joe, I've come here in search of jerky making pros. I've had several attempts but it's just not working out right using internet sourced recipes.

I was hoping someone here could help steer me in the right direction. There is only one brand her in the uk that a absolutely love called Texas-joe. Any help or suggestions would really be appreciated.

Hi guys thanks everyone has been really friendly, I dont mind lots of answers yo my questions, it just gives me lots to try lol just brought some of my favourite jerky only to find the reciepe completely changed and now its really sweet. It used to be different now its the same as the rest, oh well
