Hello, I just got an MES 30 and found this forum while searching for advice on the temperature issues with it. I previously had a propane camp chef smoke vault and before that I smoked on my weber (I still do occasionally). I got the cold smoker attachment for my MES and am looking forward to making some smoked sausage.
