Hello everyone.

I have actually been reading information on this forum for the last 3 years or so.

I am a Hobby Smoker but am wanting to become a Pro and would like to get my own operation going in the next few years.

I live in Middle TN on a 101 Acres of Oak and Hickory trees so I use wood for most of my smoking.

I have tried using charcoal the last couple of times and was not as happy (although it was easier)

I'd be cookin with wood too if I lived in a forest ! Wow , you are in bbq heaven , brother! What kind of pit do you have?

My smoker is nothing special.  I have a bunch of hobbies and not a ton of cash so I keep everything as cheap as possible.

So far I have been smoking on other peoples hand me downs.

Right now I have a large horizontal smoker with an offset fire box.

A neighbor was getting rid of it cause of a few rust holes in the firebox but I patched them up and it works pretty good.

I am moving soon across the state and plan on building a real sweet smoking setup there once I get settled.

I had a nice cook yesterday, I made my first fatty and did a small brisket.  I took pics of the prep and when the meat went on the smoker but forgot to take some finished pics (I got distracted by the deliciousness of it)
