Hi everyone!

I've been cooking for awhile now but I have just entered into smoking. I have fond memories of my dad and neighbor getting up at ungodly hours and firing up the smoker so that we could have a bunch of ribs or turkeys or brisket for lunch or dinner. However, smoking has always intimidated me. I never had anything to smoke with and then I was afraid of ruining the meat.

Well, I bit the bullet and couldn't pass up Wal-Mart's Black Friday deal on this Masterbuilt as a starter smoker. In fact I've got a chicken in there right now with apple chips! My wife and I are a little bit TOO hungry as it's taking longer than I had guessed (no worries - this is a learning game).

Anyhow, I'm looking forward to getting to meet you all and thank you for the resource you've provided by way of this community.

Well Al, here's what the first run ended up with. As far as taste goes, she was one delicious bird!

MES 30, 220, ended up about 7.5 hrs I think. I checked on it way too much - went out and bought a probe since then so I can leave that door shut.

I used Rib Rack Chicken Rub for seasoning - the seasoning was just ok.
