Hello to all! I have been trolling around on the forums for a few months and have read many articles and needed to finally join. I had big plans for my first smoker but the wife talked me into keeping it basic as I'm just starting out smoking. I've been grilling for awhile, but never smoked. So we took a trip to Lowes and I ended up with a basic brinkman red vertical electric smoker and a wireless thermometer. ( not what I intended on getting, but I agreed with wife) Then to the meat market and bought 2 - 6lb shoulders and went home. I combined a few of you guys tips and tricks and got to rubbin. 14 hrs in the fridge, uncovered and this

Then 9 hrs. @ 235-245 (IT of 188)and FTC for 3 hrs. I had to use a truck windshield visor thing wrapped around the smoker towards the end to get higher temps. Haha coonass! I also used a turkey frying thermometer to read the temp was at the center of the smoker, and then it also came with one on the lid, and I had wireless in the meat. 3 total, it looked like the dashboard of a drag car more than a smoker. Then these beauty's.

Last weekend I did 2 - 6lb brisket flats. Same procedure, but we used our own style rub marinated over night, and injected.

On the smoker for 8 hrs 235-245 (IT of 192). These were very impressive. I just wish I could have cooked more, they were gone in like 10 min.

This is just the beginning, and I'll graduate to a bigger better smoker sooner or later!!

Welcome to the forum!!!  Everything that you smoked looks just yummy!  Would you care to share your rub information?  I make rubs and might find something I overlooked to vary the flavors.  Keep on keeping on!  Steve
