Thanks for the warm welcome. I am hooked and it didn't take very long. I tried it out yesterday,I made 3 slabs of ribs and a brisket.the brisket was fantastic and the flavor of the ribs was the same. The only problem was I would liked ribs to be a bit more fall off the bone more and I have learned that fall off bone is not necessarily a good thing. And the other was I struggled to maintain 225. But it was a battle that I didn't mind, the beer helped me thru it.

Welcome from Dayton, OH.   If you ever get the chance to get to cincinnati, visit Jungle Jim's market.  Went there today and found duck heads.  Anyone got a recipe for smoked duck heads?

I have been to Jungle Jim's a few times. They have skinned cow's heads, skinned goat heads, and skinned pig heads. Peepers still included. They also have chicken feet. Not that I have the desire to try these things. But I do stop and look at these things for a while and think about them.

OK  fellow traveller you just went way out on the edge ! Duck tongues yes duck feet yes but the whole head! I am thinking split ,then chinese flavours,star anise ,ginger,shallot but I am in uncharted territory ,so are you!
