Hi my name is Rich and I live in Northern Wi.  I am far from a pro at this smokin' thing but have been known to cook just about anything on the grill.  I just bought my 1st off set smoker (Oklahoma Joe) from Home depot and have used it 2 out of 3 days I've had it.  I will definitely have to make some modifications to it and will definitely use this forum for hints & suggestions.  Got to go for now, have to check on a sirloin tip roast!                                                                                                                                                                                               "IF YOU CAN' GRILL IT, SMOKE IT, OR DEEP FRY IT, IT JUST ISN'T WORTH EATING!" 
 
Welcome,  I used my Smokey Joe for a lot of years with the modifications but it is a bit more difficult and you do have to pay more attention to it.
 
You definitely have to pay attention to it, with a few modifictions I think it may need less attention.  In the mean time it will

 take a few cold ones to attain perfection!
