I'm not new to smoking-I've done everything from whole hog to hot dogs. I cook everything but chicken on a large scale. I'm smoker crazy. I have classics like the JR Enterprise 23-60, Backwood Chubby, Weber Kettle and every other kind of outdoor cooking implement. Attached are some photos of my obsession

Yes, I'm a retired 19D Cavalry Scout (21 years). On my profile I left out some equipment.
Weber Genesis 3, Camp Chef Smoke Pro Pellet, Vevor 36" Flattop, 2 Master Built Electric Smokers, A Nex-Grill 3 burner, only have a 10" slicer, 1hp Meat Grinder, and a dehydrator. I also have various weber attachments-rotisserie and santa-maria grill. How do you know about 19D

Thanks for the welcome. I figured I'd join in this forum because I like to Q. I've eaten BBQ in a lot of places, Fl, GA, SC, NC, KY, MO, OK, Tx, Mi, MS, AL, VA, NY, RI, MA, VT, CA, FRG, Saudi Arabia and probably a couple of other places I forgot about. It funny how different places like different styles of BBQ. in NC some residents cannot stand "vinegar pig". I look at BBQ like cigars-I'll keep trying different ones until I find the one I like best. And the great thing is I hope I never find the perfect cigar or BBQ-gives me a reason to keep searching for perfection.
 
In short yes. The Army sent me to San Angelo Tx. 45 years ago. The Mrs. is tired of the winters, so I made a joke about moving to San Angelo. She'd never been there so for her B-day she went for a visit. Been back twice in the last couple of years now we're getting ready for the move. San Angelo is a great place that no one knows about.

Great job on what you posted. Is Texas calling you? Tough competition down there.
As for competition, I'll get a reverse flow H20 smoker-and enter a couple of lamb, goat or pork competitions on a local level. Wow close to Canada-My summer place was 15 minutes to Canada by ferry.
