Hi I am new to the sight am glad i have found it.  I have already learned many things from many of your posts.  I have been smoking meats ie deer sausage ribs and pork shoulders for about a year now using a homemade smoker made from an old commercial fridge have recently purchased a masterbuilt electric smoker and have been impressed so far.  I look forward to learning from all of the experienced individuals on this site.  So long for now

There's several MES owners, including me, and I really like mine. Only problem I've had is the actual cabinet temp is 25* cooler than the set temp...I just compensate for it.

Would you mind updating your profile to include your location please? It helps to know what part of the world you are in when answering questions and such. Good luck!

Six hours into smoking my first brisket pondering whether to take off smoker and wrap in foil any suggestions

Internal temp is 148

If I was going to foil I would wait until about 160*.

I have looked through your pictures and it looks like you are maing some great smoked meats have you tried the amzin pellet smoker in your mes i don't think my mes is producing enough smoke
