Hello from East Texas

Hello. I'm from Carthage, Texas. We are about 45 miles West of Shreveport, LA.
I am a rookie smoker. I enjoy cooking and trying unique foods, so smoking is a must for me.
I built my first, small scale smoker yesterday, and started off with cheese. Looking forward to trying meats and vegetables. Great site!
