I'm JT from central Florida. I have been smoking with a basic water smoker for 20 + years and am now enjoying my indirect heat smoker with a side fire box. I am an amateur in the sense that recipes to me are only a rough outline, so I almost never make anything exactly the same way twice. I never use a thermometer other than the temp guage on my smokers and so far I have had great success.
I have smoked more turkeys than I can remember, ribs, chickens, pork & recently my 1st brisket (profile pic). It turned out great and am looking forward to improving on my next.
I am also looking forward to what I can learn here from the many more experienced cooks in this community.
