Names Jordan, I posted for the first time yesterday in the sausage thread, looking for some help with snack sticks. I live in NW Ohio near the shores of Lake Erie. I got my first smoker about 5 years ago when I started hunting. I was determined to do all of my own processing from the start. My main area of interest is sausage and jerky, although I don’t have a lot of batches under my belt. I have a MES 40 that I upgraded with a Auber PID and auber fan kit. I also use the masterbuilt slow smoker attachment. I’ve probably gotten about 99% of my knowledge on smoking from you all and would like to thank you greatly. There is a wealth of knowledge here that I would otherwise have no access too. I’m looking forward to continue to learn and ask more questions, now that I got my first post out of the way.
 
Welcome Jordan from Sandusky. Same rig minus the fan. Learned pretty much all of this here too and am constantly amazed at the quality of my stuff. Another thing that really helped me was hanging my product at room temp a few hours to take the chill off of it. Dries the casing as well so you can skip that step. Also, jerky gun stuffs sticks WAAAY easier than a dedicated stuffer. I need to revisit sticks as the few times I ran them was disaster back when I first started.
 
Welcome from Cleveland Jordan!!!! I too was a newbie like you not that long ago and the folks here are AMAZING!!!!! Certainly upped my sausage game for sure. Only made smokies once using my same recipe for slovenian sausage and they came out great. Get good casings and soak them with some baking soda. I think a tip from SmokinEdge SmokinEdge but hell, I'm old and can't remember squat. Sorry if it was someone else. I get my casings from my local butcher and they have been working much better than what I first bought online. Keep tweeking and trying new things. Even the sausage that doesn't turn out Great is really good. You will learn a lot just by lurking, lol.
 
Thanks everyone! zwiller we are practically neighbors, I live Fremont. I haven’t used a gun for sticks, which would have been easier on my wallet. I’ve got a stuffer with electric motor and footpedal, used for the first time last week and was a pleasure to use. HushyQ, I’ve bought stuff from the bearded butchers before, which I think are over your way. Seems like top notch stuff but would like to experiment my own recipes someday.
