Heating element for -122F LAB freezer from U OF M need help sausage smoker

Hi all!

 New to here:

Sorry for bad pics!! 

I just got the -122F lab freezer from the university of Minnesota!!  

700 pounds 7" thick walls.

I want to make it into 3 things

1 cold smoker

2 dehydrator

3 most important a Sausage smoker

It will never need to get over 180F 

Inside dimensions = 54" high X 27.5" Deep X 32" wide 

27.5 cubic feet total smoke chamber to work with.

Okay my question is how many watt heating element do I need and something that does not require me to ROB a bank (:

I think I got every thing else figured out. Maybe??

PID i'm thinking of (auber  SYL-23X2P)

I am no expert I make those things cold that being said if your using 120v 1200 to 1500 watts seem to be the most popular those things have a butt load of insulation so I think those would be fine. Always keep a spare hot plate it never fails you loose one with a big load of sausauge just my 2cents.
 
I'm thinking a 40 watt incandescent light bulb would heat that thing.....

That would make an AWESOME freeze dryer for long term food storage...   I've seen them advertised lately...
