My local Giant started carrying Hatfield St Louis style ribs. They come pretrimmed, about 3lbs a rack, previously frozen.

I made some a week or so ago and they came out pretty good, wondering if Antoine else has run across these lately and what they’ve thought about them.
 
All pork is frozen for 30 days minimum at -30° below zero to certify it (kills trichinosis) in the USA.

I wondered how they made sure there was no Trichinosis in it.
But if it is frozen at -30° for 30 days, how can they say this:

"About this item
  • Meaty, all-natural back ribs
  • Specially selected for premium quality
  • 3 slabs per bag
  • Fresh and never frozen <???
  • Product of USA"
Confusing. How can they certify that the meat is fit, if it hasn't been frozen?
