Halibut cheeks ideas

I am selling a kidney for some halibut cheeks. Never cooked them before. Need ideas...preferably pan fried. As much as I love smoked foods I want no other flavours in this dish.

East , West coasters - please post some true and tried recipes.

Little butter a little garlic, pepper. They cook quick. Very much like cooking scallops. Deglaze pan with white wine and make a light butter-wine sauce.

Simple never fails.

Please tell me they have more fat than scallops.

Zero fat. The cheeks are pure meat.
