Morning all,
While going through my cold smoke cheese stash. I couldn't resist opening up a pack of monterey cheese that I smoked back in September 2021. Man, that was delicious! Smokey and creamy. I'm getting ready to get a batch smoked and stored for another couple of years.

I smoked a bunch in October, I still have not tried it. I am thinking I over smoked it @ 3+ hours though.

I am going to break into the River Rat 12 and 20 yo cheddar I bought last month this weekend.

Wow , sounds good Steve. I don't know how you can hold on to it that long unless you make so much you have lots to choose from all the time. :emoji_sunglasses: Than I read that Jeff jcam222 jcam222 just opened a 14 year old that you sent him. You guys have will power for sure.

Thanks David! I've got cheese that I bought 6 years ago that I smoked. I smoke in volume every year. So I have aged cheese on hand. The ultra aged cheese is stuff that I bought that was already aged 10-14 years.

Is that 14 years in the freezer after smoking or a 14 year aged chedder that was smoked?
Properly stored cheese can last 20. Or more years in the fridge. Frozen cheese is not good for snacking. It looses its texture. But for shredding for recipes. It works well. The cheese I gave Jeff was 14 years old before it was smoked if I remember. I did smoke 12 year cheese 5 years ago. Words can not describe the flavor and texture. Smooth and creamy with a punch of crystals. Funky as all get out. And amazing with crackers, good salami. And a good bourbon for sipping.

Ahhh , that makes sense. But you still hang on to it for years. I would have to hide it from Mona as she is a date freak on things. Even close to expiry date on things she likes to chuck as soon as she thinks im not watching.
That is why now I have a couple of my own small fridges, lol.

Oh Yeah! I know the pain. Ann throws out a lot of things by expiration dates. A barely used gallon of milk......expired today. Dumped. But, with cheese and the things I do. She leaves alone. I still need to train her on comfy. But nasty looking shirts do NOT go in the garbage! Or my comfy sweat pants. They may show 5 meals on them. But leave them alone!

Yes it is a running joke around here, and Mona's mom is worse. If I say something has a different taste in a meal, ( now I did not say bad ) she freaks and starts checking the dates on things. I don't know where she started that because Mona said they grew up same as I. Food was like gold. You used it until it was gone.

As for my cloths, Mona will not throw out my things , but has no problem telling me , you have had that for 20 years + , maybe time for new underwear, shirt etc LOL.

If my garage/yard hoodie is looking nasty. She'll "recommend"getting a new one. I'll say no. This is fine. Then a week or so later when I go to get it. There will be a new one where it was supposed to be!

If my garage/yard hoodie is looking nasty
My wife has learned to leave my stuff alone. I've got shirts, sweaters, pants, and sweatshirts that still have the tags on them hanging in my closest and folded in my dresser draws. Meanwhile I'm wearing rugby shirts from the eighties and my favorite night-time sweat shirt has huge cigarette burn holes on the front and ratty holy sleeves. As long as I don't leave the house wearing it she'll leave it be.
