grinder plate size

without getting into all the gobbly goop about protein extraction and all that stuff, what size grinder plate is best for grinding pork in one pass for smoked sausage , the reason i ask is my new grinder came with 4.5 mm fine plate and i think it will bog down the grinder

For smoked, breakfast, Italian, etc, I run 1 pass through a 4.5mm plate. Bratwurst I like a little coarser grind and do 1 pass through an 8mm plate.

Top row: 1/2", 5/16"
Bottom row: 1/4", 3/16", 5/32
I like the 1/4" (6.4mm) plate, but I like a coarse texture on most of my sausage.

For something like hot dogs or Summer sausage I use the 5/32" plate which gives me this grind.
