Grilled Chipotle Chicken

Last night I started marinating some thighs in a chipotle sauce and grilled them.
Of course the had to be accompanied by the ubiquitous Mexican rice and beans.
Made for a fine lunch and I just finished round two for dinner... Belch!

No pics for lunch as I inadvertently let my phone's battery die and it just barely got the finished pic.

But here's dinner, two nice burritos, yum!

I have some tasty Al Pastor marinating in the fridge for tomorrow's lunch.
 
Man, that looks great. If you lived in PA I would be at your house everyday.

They bathing in only chipotle sauce? Nothing added?

No sir, it's not straight chipotle puree, it's my usual base for Mexican red sauce that I use for grilling chicken.
I start with a 28oz can of Red or Green Enchilada sauce and build on that.
Generally it's pretty close to this.

Chicken Grilling Sauce
1 28oz can of Enchilada sauce, red or green
2 7oz cans of Salsa Casera (red) or Verde (green), pureed coarse
(or chiles such as today's chipotles)
4T Chile powder
2T Achiote powder
2T Paprika
1T Cumin
2T Salt, add to taste

The above is also close to what I'm marinating my Al Pastor in.

Al Pastor Marinade/Sauce
1 28oz Red Enchilada sauce
2 20oz Pineapple chunks, blended till coarse
1/2C Brown sugar, add to taste
6T Guajllo chile powder
4T Achiote powder
2T Paprika
2T Salt, add to taste

i enjoy your cooks chili, live on the AZ MX border most of my life and have learned both sides. must say most of my cooking tends to be more southern. I truly gain from your posts and thank you.

always happy to share anything I can, glad you like my cooking.

I was born/raised in San Diego, CA and Lubbock, TX, consequently heavily influenced by Hispanic culture and food.
And living with a ethnic Mexican family for a couple years really gave me a base in Mexican home cooking.

I should've posted my breakfast today.

Dang it Chile..... Now I am hungry again..... That is some mighty fine looking food again... POINT!!
I am waiting for some time to try the AL Pastor. Sounds like there may be some unwanted down time coming up so if I have time it's going to be a definite try...
