I did a Smoked Chicken Salad last night and it was great-even the mom-in-law loved it!
2 cups cubed, smoked chicken
4 green onions sliced (white portion and about 2 inches of green)
2 celery ribs, diced
1/2 green apple, peeled and diced or shredded
4-6 tablespoons of low fat mayonnaise
1/2 teaspoon dry mustard
1/2-1 teaspoon celery seed
salt and pepper to taste
Romaine lettuce (optional)
Sandwich sized Croissant Rolls
In a mixing bowl add green onion, celery, apple, 4 tablespoons mayonnaise, mustard, celery seed and salt and pepper; mix well. Add chicken to bowl and fold in chicken to distribute evenly. If mixture look dry, add and addition 1-2 tablespoons of mayonnaise and gently mix together.
Place a couple of lettuce leaves on bottom of roll, top with chicken salad mixture, add additional lettuce on top if desired and cover with roll top.
Make about 6 sandwiches
