Hello everyone!
It all started when my gas grill that I bought from one of the "big box" stores completely rusted through and fell apart. It was then that I visited one of the local sages at the local Ace True Value stores and decided to buy a Weber Performer series charcoal grill.
After unintentionally cooking "Cajun" style chicken breasts, I started having second thoughts. Thoughts of selling the Weber on Craigslist and buying another gas grill flashed through my head, until I visited a local BBQ store and spent an hour talking to what I thought was the store owner, which turned out to be a loyal customer who was super passionate about smoking. It seems that most folks that get into it, get pretty passionate about it! P.s I've since met the owner and he's a rockstar.
Over the past couple of years, I've done a fair amount of smoking on the weber, but have played it pretty safe...sticking to pork butt, chicken and turkey. I've just recently gotten hooked on Meathead Goldwyn's site and my interest has been fired back up again (sorry, bad pun).
I still have the Weber, and tonight I drilled a 1" hole through it and mounted a PartyQ temperature controler. I also brought some fire brick to keep my coal tight to one side to maximize my indirect cooking area. Can't wait for the first test run!
