Hello there! Just wanted to check in and introduce myself quickly. As the title indicates I'm located Washington state. Snohomish to be more precise. I found this site after an electric digital windowless "firstish"generation MES 30 followed me home from Ace Hardware the other day.

I have another barrel type smoker/cooker that has served me well for several years but it just doesn't go low enough to cold smoke. It's optimal temp is in the 250-275 degrees F range.

What I want to do is learn how to use the MES 30 for normal smoking but more importantly for cold smoking salmon or making jerky which I have never done before.

I figured the MES 30 would be a good introductory machine into that world. I want to learn, experiment, have fun and hopefully make some great tasting food while I am at it!

Thank all of you in advance for all the help you will probably afford me while I am here. I'm looking forward to a new adventure!
