Morning everyone!  New to the forums.  The BBQ bug bit me while I was living in Texas during my Army years.  Have been smoking some briskets and butts since I moved back but no where near like I did before.   I have a Brinkman horizontal w/ off set firebox that smokes well, but I catch heck trying to keep the temps up enough to cook...  a brisket is an all day and then some event.

I was doing some searching on fridge conversions and found this site.  I think I found a(nother) new internet home. 

Other interests are learning to smoke cheese, sausages, and who knows what else.  Plan is to build/convert something into a vertical unit to hopefully increase cook times.  I look forward to learning from everyone.
 
Welcome to SMF. Theres lots of great information here that could help with temp control on your smoker.

You will also get lots of great advise form making sausage. If you are going to do cheese and inexpensive way would be to get a A-Maze-N-Smoker. They work great and can be used with your current smoker.

Welcome to SMF! Glad you are part of the group. There's a lot of great information here to feed your smoking addiction.  Oh, also be sure to check out the Wiki tab... there's tons of information there and it's all free! First off Welcome Bow Hunter to SMF. you'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
