I been on a soup and salad kick. Good way to cut carbs and I love them. Was planning a greek salad but making sausage kind of wore me out and did good to make soup.
Roasted a poblano pepper to start.
Then cut up half a onion, some garlic and pepper. One 4oz can green chile, 2 cups chicken broth and 14 oz green Enchilada sauce. 1 lb chicken. Seasoning:
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
Everything but chicken into pot. Simmered about 20 minutes than added cream cheese and simmered until melted. Used stick blender. Added chicken, turned off burner and let sit 10 minutes. Added cheese, jalapeno and cilantro. That poblano had some heat to it as they sometimes do. Was a bit spicy but that how I like it. Soup was very good.
For dessert a shot of my Ginger Jack. Has a bunch of ginger and some jalapeno's in it. It is so good!
