Green Enchilada Chicken Soup

I been on a soup and salad kick. Good way to cut carbs and I love them. Was planning a greek salad but making sausage kind of wore me out and did good to make soup.

Roasted a poblano pepper to start.

Then cut up half a onion, some garlic and pepper. One 4oz can green chile, 2 cups chicken broth and 14 oz green Enchilada sauce. 1 lb chicken. Seasoning:

1 teaspoon Kosher salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano

Everything but chicken into pot. Simmered about 20 minutes than added cream cheese and simmered until melted. Used stick blender. Added chicken, turned off burner and let sit 10 minutes. Added cheese, jalapeno and cilantro. That poblano had some heat to it as they sometimes do. Was a bit spicy but that how I like it. Soup was very good.

For dessert a shot of my Ginger Jack. Has a bunch of ginger and some jalapeno's in it. It is so good!

Ginger Jack, is that Jack Danial's with added ginger and jalapenos
I make it with my spirits I make but can be made with vodka or rum. Just want the spirit to be 100 to 110 so you end up with about 80 proof. I just slice the ginger skin on. I use Allulose Monkfruit blend to make simple syrup. Here is the recipe:

Soup looks killer! Now I'm trying to wrap my head around the booze. The cinnamon/allspice/cloves combo makes me think of mulled wine or spiced rum which I despise... (ok... I do like Sailor Jerry but anything else is yucky) but the jalapeno lime ginger addition makes my brain wonder what it tastes like.... I'd sure give it a try but not sure I'd make a batch to find I didn't like it.
 
Soup sounds great, and I'm definitely making that Ginger Jack! Probably right up my alley since on paper, it looks like a boozed up version of sujeonggwa, a Korean cinnamon and ginger punch.

I think it was a Jamaican drink. Friend got recipe from a guy in Vegas. I really love it.
