My second dish for Hatch season. Only had 2 lbs of pork butt so halved the recipe. Used fresh tomatoes in place of rotel. Good place for that Chimayo Chili.

Browned meat and onions. Added flour to onions. Needed to add a bit more oil.

Everything in and simmered about 75 minutes. Pretty good stuff.

Man Brian, you must feed the entire river crowd and the local brewery with all the food you make! I might have to get a place near you in TX to partake in your cooking.
 
Now that’s a nice bowl of stew!!!! Sign me up as that’s a keeper!

Great looking stew! About as good as you can get for good ol comfort food
