That reminds me of small family operations that I used to visit in eastern NC. back in the '50s and '60s. I remember one in Martin County where the old man cooked one whole pig every 2 weeks. People would show up 2 or 3 hours before the pig came off the fire to be sure they got some of it. There were always people who didn't get there in time. That's how good pit cooked barbecue can be when done with love by an expert.
If I'm ever in the neighborhood of Hemingway again, I'm gonna be sure to stop by Scott's. I hope people noticed that the customer said you had to be there on Thursday, Friday, or Saturday. They apparently don't cook but one day a week.
