Hi everyone. I'm still new to smoking. I made a batch of pepperoni sticks today using lean ground beef. They turned out very greasy you could see the grease under the casing. What did I do wrong.

Sounds like you may have smoked them at to hot a temperature. try to keep the smoker under 175°f (80°c)
