Pork Baby back ribs, I can't decide whether these are my favorite food to BBQ. My recipe is not fancy at all: salt and off the shelf McCormick texas beef rub. I don't wrap and don't use BBQ sauce during the cook. before smoking the ribs do get a very quick time on grill to get that crispy texture on the front, I suspect this might be a key step.

Some pictures of batches I run this past month. I don't do this comercialy , just a few friends who drop off their meat for me to cook.

Finished product, clean bone separation, but will not fall off by itself (my prefference). 6 slabs were done Sunday and now are long gone.

The previous 12. Skipped the pre grill that time and it was a mistake. still very tasty and good looking, didn't get any complaints but very very different. Lesson learned not to do more then 9 at a time and not to get lazy.

Interesting technique to grill before you smoke (I see the grill marks on the ribs). I've never tried it that way. I would have thought it might interfere with smoke penetration but I can see by your photos that it does not.

Great looking ribs. You are very nice to your friends to cook these for them.
