Ok - after I registered, I fell silent bc I was assembling and trying out my 'new' electric smoker.

It' is a VERY different animal from my trusty ol' woodie.

Newly discovered is the ability to just BAKE in it - what a nice surprise.

Our "Smoky Mac-n-Chz" is real tasty.

Will try a "smoky baked beans" side next.

Thanks for the ideas - will be busy trying them out.

To paraphrase my friends at Penzeys Spices - "Show someone you love 'em - cook 'em good food."

One of you reminded me that "it never happened without pictures"...

Whew, Tough Crowd !

OK !!  Here are the step-by-step pics...

Cook Temp varied between 225 and 300.

Ribs Cook Time: 4.5 hours on the top shelf.

Smoked Baked Beans Cook Time: 60 min and 15 min in broiler to crisp the bacon.

Half a can of Coke in the 'water pan' every 2 hours.

1- get the ribs and let 'em rest


2- Clean and Cut to fit the rack


3- Rub and Rack the ribs with Dinosaur Foreplay, Crazy Janes Lime Pepper and Salt


4-A in the smoker on top shelf


4-B runnin just right


5-the mop sauce - Bearman's Black Bear Boogie - just the right amount of 'heat'


6- setup the beans


7- all combined and ready to mix with my 'store-bought' beans


8- Beans in the pan, topped with regular thick-cut bacon


9- After 2 hours


10- Wrapped and ready for next 2 hours


11- Mopped and ready for last 45 minutes


12- Finished


13- Taste Test


14- Heaven on a plate - moist and tender


15- Baked Beans are done - I crisped them in the broiler ( big cheat )


16- Debris Field - time to relax, then clean up
