Hello , Cyder... I haven't done a goose before, but on Duck, I start it in 250* until I get a nice color started and wrap Bacon around the meaty sections (looks like a Mummy when I'm one ) and cook to 170*F or so... the rub ...S/P/O/G for me.
Some of the Game cooks will be shortly to straighten me out...
